Hiruma grows and makes a variety of local products that highlight the efforts and sustainable work carried out by different producers.
Organic farming is also a major activity here, hence the importance of pastureland, livestock and farmhouses.
HIRUMA’s primary sector mainly focuses on the following products, some of which carry the Euskolabel seal of quality.
HIRUMA’s salt pans are located in Leintz-Gatzaga. This product, often referred to as white gold, is produced in the traditional way from a saltwater source (after which the town itself is named), using the extraction by evaporation technique.
Cakes and pastries are also very typical in HIRUMA. The wide variety of products available include chocolate, Bergara rellenos and tostones, Karapaixos, cupcakes, pastries, Ignacios and Ignacitos.
Agriculture is very important in the region. Its vineyards and apple orchards give us Txakolí wine with the ‘Getariako Txakolina’ Designation of Origin and cider with the ‘Euskal Sagardoa’ Designation of Origin.
Several producers make different types of cheese with milk from their Latxa sheep herds. These cheeses are marketed under the ‘Idiazabal’ Designation of Origin.
Many farmhouses today still have their own wood-fired bread ovens and continue to make ‘farmhouse-style’ sourdough bread.
A type of black pudding made with mutton suet, onions and other vegetables (including leeks) and aromatic herbs.
Thanks to HIRUMA’s verdant green pastures, livestock is everywhere, giving us a wide range of different homemade dairy products, including milk, yoghurt and junket.
The ancient art of bee keeping is also popular in the region, giving us plenty of delicious local honey.
